If you live in Cebu, there's one streetfood that everybody knows. The Balut. It's simply a developing bird embryo (usually a duck) that is boiled and eaten from the shell. And if you do live in Cebu, I won't be surprised if you tell me you've already seen and tasted it. It usually looks like this:
But what I got in store for you is somehow an upgraded version of the traditional Balut.
Have you heard of Adobong Balut?
Well, in a sense, it's simply as the word implies. It's Balut that's been cooked as Adobo. Adobo is a famous Filipino food made by cooking chicken or pork in oil sometimes marinated in vinegar, soy sauce, onion, garlic and calamansi. Which would look like this:

So have you imagined what an Adobong Balut will look like? Well, it looks like this:
It doesn't taste as bad as it looks. You will be able to see those chick wings and beaks, though.
So where do we find these sumptous Adobong Baluts? I found it in Pardo, Cebu City. At the back of Pardo Public Market.
There's a small stall selling the traditional Balut and of course, the Adobong Balut.
It costs Php12 when we bought it. It's sold in plastic pouches.
In my personal point of view, its kinda salty, but of course, I like bland food so it's on me. But it's yummy. Kinda like the original Balut with a twist. You can enjoy it with the ever present vinegar, salt and chili mix, or enjoy it as lunch with thr traditional "Puso" or Hanging Rice. Add a bottle of coke, and it's perfect.
